I really am going to start a cooking blog with all the people at church that have been asking for my recipes. It seems like we are always having to make something and I like to keep it cheap and easy. That’s right. I just called myself cheap and easy.
I found this recipe at The Pioneer Woman Cooks. I adapted it to fit what fruit I had in the freezer.
The Pioneer Woman’s Blackberry Cobbler
1 cup sugar
1 cup self rising flour (just add 1 1/2 tsp baking powder and 1/2 tsp salt to flour)
1 cup milk
1/2 cup butter (melted)
2 cups berries ( I used frozen triple berry)
1/4 cup sugar for topping
Mix together the sugar, flour and milk. Add butter. Whisk together. Pour into a buttered dish. Sprinkle berries on top. Sprinkle sugar on berries. Bake at 350 degrees for 1 hour.
Serve with ice cream or whipped cream.

My sister in Grand Rapids lives near a blueberry farm. I think we could load up a van with friends, drive there, pick til we drop, and then spend some great fellowship time with Lois eating some of this lovely cobbler!
